SMS: Guinness Gingerbread

This week's SMS recipe of Guinness Gingerbread was chosen by Katie of Katiecakes - our lone English bakers who is such a trooper to be dealing with our crazy measurements and ingredients not available across the pond. You can check out her cupcakes and the recipe here.

I decided to make the gingerbread into cupcakes because my work loves cupcakes (just baked 6 dozen for a bake sale last week and they went quickly, more on that someday!). I wanted to jazz them up a bit, so I made Bailey's Irish Buttercream frosting from the recipe on Irene's awesome blog Confessions of a Tart. And, because I was feeling really ambitious, I filled the cupcakes with chocolate ganache. Since I made these early, a first in my baking club adventures, it was the reason I had leftovers of these on hand for my modified TWD tiramisu cake.

The verdict, people about died at work. Since I only made 12, I emailed my regular cupcake customers at work for a private tasting in my office, instead of just putting them in the kitchen. This way, I got to see and hear the reactions. There were lots of ohhhs and ahhhs. People LOVED these.


Since the gingerbread recipe is dairy free, I was able to eat the cones I replaced with ganache. I really liked it too. I ran out of molasses so I substituted maple syrup, and you could taste a hint of maple. Overall, it was pretty mild flavor wise - not a spicy gingerbread. But it apparently went smashingly well with the filling and frosting, so a great end result. I will definitely make these again. Check out the other SMS bakers here.

  10. Wow! Mine definitely could have benefited from the ganache and buttercream -they sound amazing! It seems like the people who made cupcakes enjoyed theirs more than those of us who baked them in one pan... Lots of creative frostings and fillings... You all have almost convinced me to give the recipe another shot!

Ha - so funny; I do the same thing at work with my goodies (email my favorites and tell them that the cookies/brownies/cupcakes will be in my office until X:00, and then I'm bringing them to the kitchen!) I bet that your CWs felt particularly lucky to get a special office invite for these cupcakes, with that ganache . . . and the Bailey's buttercream! These look fabulous.

  17. Whoah, I'm about dying over here!!! These are amazing! One question - what tip do you use to pipe the frosting? I would like to get a large star tip, but am very confused with all these numbers.

  18. Lorelei, your cupcakes turned out fabulously!! I don't know why my cuppies didn't dome...hmmm...what could I have done wrong? OH well, that's beside the point. I love your frosting, and that ganache filling is just over the top delicious. I've missed you so much! So glad exams are over and that we can get back to our regular chatting--although you are going to Hawaii quite soon :) I'm so jealous!

  25. Love how your cupcakes turned out. How creative. I recently learned about the cone method. Will have to try that soon. You get way more filling in the cupcake that way versus my "jab a piping bag with a metal in the cupcake and squeeze" :o)

  28. I can understand why everyne nearly died at your work! I wanted to dive into my computer just reading and viewing them. Your styling is wonderful, really captures how these are a cross bwtween uptown flavor combinations and down home comfort food. Exactly what I love in a good cupcake!
